We carefully dry-age our beef, pork and lamb prior to cutting to your specifications. The cuts are shrink-wrapped and flash frozen for pick-up at a local butcher. Price is per pound and based on hanging weight. Take-home weight is 25-35% less than hanging weight, due to dry-aging, boning and trimming.
